Generally speaking, the higher the accuracy of wheat flour processing, the lower the flour yield, the smaller the bran star containing broken bran, the whiter the flour. When the processing precision is higher, the flour size is more fine, and the flour color is white because of the light irradiation. The grain color and quality are different, the color of wheat flour is different too. Under the condition of low flour yield and low processing precision, the darker the grain color of wheat is, the darker the processed product is, and the color of wheat flour produced by white-skinned wheat is lower than that from soft-skinned wheat. It is because that in the flour processing process, white wheat bran is not easy to detect when it is mixed in the wheat flour, while red wheat bran is easy to detect when it is mixed and make the flour darker. The wheat flour with good quality has normal odor and inherent sweet smell. It is very vulnerable to mildew and bacteria when we store it, and even oxidative deterioration. Mites can be identified by examining wheat flour or by the unique odor of mites). Feverish and mildewed wheat flour, through stored for a short time, has a low fatty acid value, but often has an unpleasant bitter taste (it is fatty acid decomposed, and then oxidizes acid to produce aldehydes and ketones). As a result, wheats with mildew and deterioration have peculiar odor, which seriously stimulates the sense of smell. What Shall We Pay Attention When Use the High Plan Sifter?

High plan sifter is the main sifting equipment of the flour milling machine factory. 1) The materials under the sifter are highly mixed and the classification effect is poor. Shows that the sifting efficiency is low, the main reason is paste sifting or different types flour mixed. Replace or replenish the cleaning balls (blocks) and picking blocks in the sieve. 2) When testing the color of flour, if you find that the flour contains excessive amounts of bran, also please stop the wheat or maize flour mill machine production line. 3) In the patrol inspection, if there is no flow under the screen, tap the high plan sifter door and make a “squeaky” sound, indicating that shows the sifter is clogged. It is possible that the inner and outer passages of the screen are clogged and the material circulation is not smooth. 3.The flannel around the screen frame should be kept intact. If it is missing, it should be replenished in time, otherwise there will be flour leakage. When installing the sifter, the sealing strip cannot be knocked out. In operation, the front part of the sieve is placed in the sieve box, and then the rear section is lowered.

4. After the sifter is placed, it will be compacted at the end. In the vertical direction, the screw pressing mechanism of the top of the warehouse is used to adjust the screen to each other by adjusting the left and right screw mosquitoes. During operation, the left and right thread should be adjusted in turn to prevent the one side from loosening, causing the displacement of the screen, causing the powder to be powdered, and the screen to be pressed in the horizontal direction. Because of the horizontal direction, the screw on the door can be adjusted. In order to make the horizontal pressing force uniform, the correct adjustment sequence should be tightened along the diagonal.

5. When restarting, the flat screen should be idling for a few minutes to make the material empty, so as to prevent too much material in a short time, resulting in blockage.

Importance of Water Regulation in Wheat Raw Grain

The purpose of wheat water regulation is to increase the toughness of the cortex and keep the bran intact during processing. The embryo softens and grinds to flour. In the national standard, the moisture content of common flour is less than or equal to 14%. The moisture content of high gluten powder is less than 14.5%. Different customers have different requirements for water. We should have targeted processing water.


The amount of water added to each food processing workshop and noodles is basically constant, but the external environment changes greatly. In the process of food processing under different temperature conditions. The dough softening speed is different. For example, the water content of flour should be lower under the condition of high temperature and water temperature. It hardens the dough and slows down the softening process. So in late spring, early summer and autumn, the water-saving points should be lower, and in cold weather, the water-saving points should be higher.


There was a great deviation in the water-eating ability of different wheat varieties. This is due to the quality of gluten. The absorptive capacity of gluten is at least 1:1.6. The highest: 1:2.7. The wheat gluten with low soft bulk density and unsaturated grain absorbed less water and was easy to soften. If wheat with high hard bulk density and full grains has strong water absorption ability. The dough is quite stiff. New wheat gluten has not yet been fully formed. That is to say, the ripening period is not enough. He also tends to soften.


That is to say, the water content of flour is higher when processing wheat with high hard bulk density and full grain. The moisture content of new wheat flour processed with soft, low bulk density and unsaturated grains is lower. In addition, the deviation of water absorption ability of each part of wheat grain is relatively large. The central part of wheat has strong water absorption ability, and the more dependent it is on the periphery, the worse it is. In the process, the front core grinding flour has strong water absorption ability.

That is to say, the moisture content of wheat flour with different qualities should be different. The same wheat has different identities under different climatic conditions. Flour in different technological positions has different water absorption capacity, which can be chosen according to the requirements of flour quality.
